1. Bring a pan of water to the boil. Whilst you are waiting for this, mix your salad ingredients together. If you prefer to use an egg poacher, please do, but we find the eggs set a little too hard in a poacher.
2. Break the egg into a cup and gently lower into the water. Whisk the water around without breaking the egg, so that it will set. Repeat for other egg.
3. If you like lightly done eggs, remove from the water after 30-40 seconds. Leave longer if you like them hard.
4. Serve the eggs on top of the salad.
